Sauté the Aromatics:

  1. In a large pot or Dutch oven, heat the coconut oil over medium heat. Add the onion and sauté for 3-4 minutes until softened.
  2. Add the garlic and ginger, and cook for 1 minute until fragrant.

Add the Sweet Potatoes and Spices:

  1. Stir in the diced sweet potato, turmeric, cumin, coriander, and chili powder. Cook for 2-3 minutes to toast the spices.

Simmer the Curry:
