Ingredients
    For the Stuffed Peppers:
  • 4 large bell peppers (any color, tops cut off and seeds removed)
  • 1 tablespoon olive oil
  • 1 lb ground turkey (450g)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup cooked quinoa (150g)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • For Garnish (Optional):
  • Fresh parsley, chopped
  • Lime wedges
Instructions
    Preheat the Oven:
  1. Preheat your oven to 375°F (190°C).
  2. Prepare the Filling:
  3. In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook for 5-7 minutes, breaking it up with a spoon, until browned.
  4. Add the onion, garlic, zucchini, and corn. Cook for 5 minutes, stirring occasionally, until the vegetables are softened.
  5. Stir in the cooked quinoa, cumin, smoked paprika, and chili powder. Season with salt and pepper to taste.
  6. Stuff the Peppers:
  7. Place the bell peppers in a baking dish. Fill each pepper with the turkey and veggie mixture, pressing down gently to pack it in.
  8. Bake the Peppers:
  9. Sprinkle the shredded cheese on top of each stuffed pepper.
  10. Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  11. Serve:
