Instructions

1. Prepare the Chicken:

  1. Pat the chicken dry and season with salt and pepper.
  2. In a large skillet over medium-high heat, add olive oil.
  3. Sear chicken for 5–6 minutes per side, until golden and cooked through. Remove and set aside.

2. Make the Mango Sauce:

  1. In the same skillet, add garlic and ginger, and sauté for 30 seconds until fragrant.
  2. Add mango, lime juice, soy sauce, honey, chili, and water.
  3. Simmer for 5–7 minutes, stirring, until mango is soft. Mash or blend into a sauce (optional).

3. Return Chicken to Skillet:

  1. Add the chicken back into the skillet and spoon sauce over.
  2. Simmer together for another 2–3 minutes, until fully coated and glazed.

4. Serve:

  1. Garnish with chopped cilantro and mango slices.
  2. Serve hot with rice, quinoa, or stir-fried veggies.
