Ingredients
    For the Rice and Beans:
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 cup long-grain white rice (200g)
  • 1 can diced tomatoes (14 oz/400g)
  • 1 can black beans, rinsed and drained (14 oz/400g)
  • 1 1/2 cups vegetable broth (360ml)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • For Garnish (Optional):
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sour cream
Instructions
    Sauté the Vegetables:
  1. In a large pot or skillet, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper, and sauté for 5 minutes until softened.
  2. Toast the Rice:
  3. Add the rice to the pot and stir to coat it in the oil. Toast the rice for 2-3 minutes until lightly golden.
  4. Add the Remaining Ingredients:
  5. Stir in the diced tomatoes, black beans, vegetable broth, cumin, smoked paprika, chili powder, and cayenne pepper (if using). Season with salt and pepper to taste.
  6. Simmer the Rice:
  7. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
