This creamy spinach and mushroom pasta is rich, flavorful, and completely meat-free. The combination of sautéed mushrooms, fresh spinach, and a creamy sauce makes it a perfect weeknight dinner or a special occasion meal. Serve it with a sprinkle of parmesan cheese for extra flavor!

Ingredients
    For the Pasta:
  • 12 oz pasta (penne, fettuccine, or your choice (340g)
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced (225g)
  • 4 cups fresh spinach (120g)
  • 1 cup heavy cream (240ml)
  • 1/2 cup vegetable broth (120ml)
  • 1/2 cup grated parmesan cheese (50g)
  • Salt and pepper to taste
  • For Garnish (Optional):
  • Fresh parsley, chopped
  • Extra parmesan cheese
Instructions
    Cook the Pasta:
  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Sauté the Vegetables:
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and sauté for 3-4 minutes until softened.
  4. Add the garlic and mushrooms, and cook for 5-7 minutes until the mushrooms are tender and golden brown.
  5. Add the Spinach:
  6. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  7. Make the Sauce:
  8. Pour in the heavy cream and vegetable broth, and bring to a simmer. Stir in the grated parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.
  9. Combine and Serve:
  10. Add the cooked pasta to the skillet and toss to coat it in the creamy sauce.
  11. Serve immediately, garnished with fresh parsley and extra parmesan cheese if desired.
