Instructions

Prep the Steak:

  1. Remove steaks from fridge 30 minutes before cooking
  2. Pat extremely dry with paper towels
  3. Season generously on all sides with salt and pepper

Sear to Perfection:

  1. Heat cast iron skillet over medium-high heat until smoking hot
  2. Add oil and swirl to coat
  3. Carefully place steaks in pan and cook undisturbed for 3-4 minutes
  4. Flip using tongs and cook other side for 3 minutes for medium-rare

Create the Butter Sauce:

  1. Reduce heat to medium
  2. Add butter, garlic, and herbs to pan
  3. As butter melts, tilt pan and continuously spoon over steaks for 1-2 minutes
  4. Optional: add lemon juice to the butter

Roast the Vegetables:

  1. Toss vegetables with oil and seasonings
  2. Roast at 400°F for 12-15 minutes while steak cooks
  3. Broil last 2 minutes for extra crispness

Rest and Serve:

  1. Transfer steaks to cutting board and let rest 5 minutes
  2. Slice against the grain
