Ingredients
    For the Soup:
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 lb boneless, skinless chicken breasts (450g)
  • 1 cup wild rice blend (200g)
  • 6 cups chicken broth (1.5L)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 cup heavy cream (240ml)
  • Salt and pepper to taste
  • For Garnish (Optional):
  • Fresh parsley, chopped
  • Crusty bread
Instructions
    Sauté the Vegetables:
  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté for 5-7 minutes until softened.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Cook the Chicken and Rice:
  4. Add the chicken breasts, wild rice, chicken broth, thyme, rosemary, and bay leaf to the pot. Bring to a boil, then reduce the heat to low and simmer for 25-30 minutes, or until the rice is tender and the chicken is cooked through
  5. Shred the Chicken:
  6. Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot.
  7. Add the Cream:
  8. Stir in the heavy cream and season with salt and pepper to taste. Simmer for an additional 5 minutes.
  9. Serve:
  10. Remove the bay leaf and ladle the soup into bowls. Garnish with fresh parsley and serve with crusty bread on the side.
