Instructions
- 1. Preheat & Prepare Chicken: Preheat oven to 375°F (190°C). Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
- 2. Sear Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 2–3 minutes on each side until golden brown (they will finish cooking in the oven). Remove chicken and set aside.
- 3. Make Creamy Sauce: In the same skillet, reduce heat to medium. Add butter and minced garlic; sauté for 30 seconds. Stir in heavy cream and chicken broth. Bring to a gentle simmer.
- 4. Add Flavor: Stir in parmesan cheese, sun-dried tomatoes, and Italian seasoning. Simmer for 2–3 minutes until slightly thickened. Add spinach and cook until wilted.
- 5. Combine & Bake: Return chicken to the skillet and spoon sauce over each piece. Transfer skillet to the oven and bake uncovered for 20–25 minutes or until chicken is cooked through (internal temp 165°F / 75°C).
- 6. Rest & Serve: Let chicken rest for 5 minutes. Serve hot with sauce spooned over the top.
