Ingredients
    For the Curry:
  • 2 tbsp Olive Oil
  • 1 Onion, finely chopped
  • 3 Garlic Cloves, minced
  • 1 Ginger, -inch grated
  • 1 Green Chili, finely chopped (optional, for extra spice)
  • 1 tsp Cumin Powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Turmeric Powder
  • 1 tsp Garam Masala
  • 1 can Diced Tomatoes (14 oz)
  • 1 can Chickpeas, drained & rinsed (15 oz)
  • 1/2 cup Coconut Milk or Heavy Cream
  • 2 cups Fresh Spinach, chopped
  • 1/2 tsp Salt (adjust to taste)
  • 1/4 tsp Black Pepper
  • 1/2 cup Vegetable Broth or Water
  • 1/2 tsp Sugar (to balance acidity, optional)
  • Juice of ½ Lemon
  • For Serving (Optional):
  • Cooked Basmati Rice or Quinoa
  • Warm Naan Bread
  • Chopped Fresh Cilantro
Instructions
    Sauté the Aromatics:
  1. Heat olive oil in a large pan over medium heat.
  2. Add onion and sauté until soft and golden (about 3–4 minutes).
  3. Stir in garlic, ginger, and green chili and cook for another 1–2 minutes.
  4. Toast the Spices:
  5. Add cumin, coriander, turmeric, and garam masala.
  6. Stir well and cook for 30 seconds to release their flavors.
  7. Simmer the Curry:
  8. Pour in diced tomatoes and let them cook for 5 minutes, stirring occasionally.
  9. Add chickpeas, vegetable broth, salt, black pepper, and sugar (if using).
  10. Simmer for 10 minutes, stirring occasionally.
  11. Add the Creamy Touch & Greens:
  12. Stir in coconut milk and let it simmer for 5 more minutes.
  13. Add fresh spinach and cook until wilted (about 2 minutes).
  14. Final Touches & Serve:
  15. Squeeze in lemon juice and give it a final stir.
