  • 2 tbsp Butter
  • 1 tbsp Olive Oil
  • 3 cloves Garlic, minced
  • 1 small Onion, finely chopped
  • 1 1/2 cups Mushrooms, sliced (button or cremini)
  • 1/2 tsp Salt (adjust to taste)
  • 1/4 tsp Black Pepper
  • 1 3/4 cups Vegetable or Chicken Broth
  • 1/2 tsp Soy Sauce (for extra umami, optional)
  • 1/2 tsp Thyme or Italian Seasoning
  • 1/4 cup Fresh Parsley, chopped (for garnish)
  • For Serving (Optional):
  • Grated Parmesan Cheese
  • A drizzle of Truffle Oil for extra depth of flavor
Instructions
    Sauté the Aromatics & Mushrooms:
  1. Heat butter and olive oil in a large pot over medium heat.
  2. Add onions and garlic, and sauté for 2 minutes until fragrant.
  3. Stir in mushrooms and cook until they release their moisture and become golden brown (about 5 minutes).
  4. Toast the Rice:
  5. Add rice to the pot and stir to coat with the butter and mushroom mixture.
  6. Sauté for 1–2 minutes, allowing the rice to absorb the flavors.
  7. Simmer to Perfection:
  8. Pour in vegetable or chicken broth and add salt, black pepper, thyme, and soy sauce (if using).
  9. Bring to a gentle boil, then reduce heat to low, cover, and let simmer for 15 minutes until the rice is tender.
  10. Fluff & Garnish:
  11. Turn off the heat and let the rice sit covered for 5 minutes.
  12. Fluff with a fork, then garnish with fresh parsley and optional Parmesan cheese.
  13. Serve & Enjoy:
  14. Serve warm as a side dish or a light meal on its own!
