Ingredients
For the Teriyaki Sauce:
1/4cup soy sauce
2tbsp mirin
2tbsp sake (or white wine)
1tbsp brown sugar
1tbsp honey
1clove garlic, minced
1tsp fresh ginger, grated
1tsp sesame oil
For the Chicken:
4boneless, skinless chicken breasts or thighs
1tbsp vegetable oil for cooking
For Garnish:
Sesame seeds
Chopped green onions
To Serve:
Steamed rice

Prepare the teriyaki sauce:

In a small bowl, whisk together soy sauce, mirin, sake, brown sugar, honey, garlic, ginger, and sesame oil. Stir until the sugar is dissolved.

Place the chicken breasts or thighs in a shallow dish and pour half of the teriyaki sauce over them. Cover and refrigerate for at least 30 minutes (or up to 4 hours).
Cook the chicken:

Heat vegetable oil in a skillet or on a grill over medium-high heat. Remove the chicken from the marinade and cook for 6-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C).
Glaze with teriyaki sauce:

During the last 2 minutes of cooking, pour the remaining teriyaki sauce over the chicken to glaze it. Allow it to cook for a further 2 minutes.
Garnish and Serve:

Remove the chicken from the skillet or grill, and let it rest for a few minutes before slicing. Garnish with sesame seeds and chopped green onions. Serve with steamed rice
