For the Salad
  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup canned chickpeas, drained and rinsed
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup fresh parsley, chopped
  • For the Dressing
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
Instructions
  1. Cook the Quinoa
    • In a saucepan, bring 2 cups of water or vegetable broth to a boil.
    • Add the rinsed quinoa, reduce heat, cover, and simmer for 10 minutes until the liquid is absorbed.
    • Fluff with a fork and let it cool for 5 minutes.
  2. Prepare the Dressing
    • In a small bowl, whisk together olive oil, lemon juice, garlic, Dijon mustard, oregano, salt, and black pepper.
  3. Assemble the Salad
    • In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red bell pepper, red onion, chickpeas, and parsley.
  4. Toss & Serve
    • Pour the dressing over the salad and mix well.
    • Top with crumbled feta cheese and serve immediately or refrigerate for later.
