    For the Pancakes:
  • 1 1/2 cups Gluten-Free All-Purpose Flour
  • 1 tbsp Baking Powder
  • 1/2 tsp Salt
  • 1 tbsp Honey or Maple Syrup
  • 1 tsp Vanilla Extract
  • 1 cup Almond Milk (or any dairy-free milk)
  • 1 Large Egg
  • 2 tbsp Unsalted Butter (melted)
  • 3/4 cup Fresh Blueberries
  • For Toppings (Optional):
  • 1 tbsp Honey or Maple Syrup
  • 1/4 cup Greek Yogurt
  • Extra Fresh Blueberries
Instructions
    Prepare the Batter:
  1. In a large bowl, whisk together gluten-free flour, baking powder, and salt.
  2. In another bowl, mix egg, almond milk, melted butter, vanilla extract, and honey.
  3. Pour wet ingredients into the dry ingredients and stir until combined.
  4. Fold in blueberries, then let the batter rest for 5 minutes.
  5. Cook the Pancakes:
  6. Heat a non-stick skillet over medium heat and lightly grease with butter.
  7. Pour ¼ cup of batter onto the skillet for each pancake.
  8. Cook for 2–3 minutes until bubbles form on top, then flip and cook for another 2 minutes.
  9. Serve & Enjoy:
