Creamy, tangy, and cheesy roasted potatoes baked with feta, olive oil, garlic, and Mediterranean herbs. A must-try comfort side dish or vegetarian main!

Instructions

Preheat and Prep:

  1. Preheat oven to 200°C (400°F).
  2. In a large baking dish or tray, toss potatoes with 2 tbsp olive oil, garlic, oregano, salt, and pepper.

Roast the Potatoes:

  1. Roast for 25 minutes, stirring halfway, until starting to crisp.

Add Feta & Bake Again:

  1. Make a well in the center of the tray and place the feta block.
  2. Drizzle remaining 1 tbsp olive oil over the feta.
  3. Return to oven and bake for an additional 15 minutes until feta is golden and soft.

Mix & Serve:

  1. Gently stir the softened feta into the potatoes or leave it whole for scooping.
  2. Squeeze fresh lemon juice over the dish if desired.
  3. Garnish with fresh parsley or dill and serve warm.
