1. Activate Yeast

In a large bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until frothy.


2. Make the Dough

Add salt, melted butter, and flour. Mix and knead until dough is smooth and elastic (about 5–7 minutes by hand or stand mixer with dough hook).


3. First Rise

Cover the bowl and let the dough rise in a warm place for 30–45 minutes until doubled in size.


4. Shape the Pretzel Bites

Punch down the dough and divide into 4 pieces. Roll each into a 14–16 inch rope and cut into 1–1.5 inch bites.


5. Prepare Baking Soda Bath

Bring 9 cups of water to a boil in a large pot. Slowly add baking soda (it will bubble). Carefully drop in the dough bites (10–12 at a time) and boil for 20–25 seconds. Remove with a slotted spoon and place on parchment-lined baking sheet.


6. Bake

7. Finish
