Instructions

  1. Preheat oven to 400°F (200°C). Pat chickpeas dry and toss with olive oil, paprika, cumin, garlic powder, salt, and pepper.
  2. Spread chickpeas on a baking tray and roast for 20 minutes, flipping halfway until crispy.
  3. While chickpeas roast, cook quinoa according to package instructions if not already cooked.
  4. Prepare the lemon tahini dressing by whisking all ingredients until smooth.
  5. In serving bowls, layer mixed greens, quinoa, cherry tomatoes, carrots, cucumbers, and avocado.
  6. Top with roasted chickpeas and drizzle with dressing.
  7. Let rest for 5 minutes, allowing flavors to blend. Serve fresh!
